Vegetable marrow flowers

  • 40 vegetable marrow flowers
  • 1/2 kilo of rice
  • 1/2 glass of oil
  • 1/2 kilo of ripe tomatoes
  • 1 onion
  • salt, pepper
  • parsley, mint, fennel (1 skein of each one)

Vegetable marrow flowers must be open so we pick them up in the morning. We wash them and then we prepare the filling: we mince the parsley, the mint, the fennel, the onion and the tomatoes. We add the oil, salt, pepper and rice and we stir. If we like we can take out half of the rice and use chopped meat instead. With the filling we made we fill the flowers and we put them in a pot. We ad water until they are covered entirely and then we put a dish over them so that they do not open during the cooking and we leave them cooking slowly until they drain their water, while we shake the pot at intervals.
